Classification – dry white wine, PGI Crete.
Grape variety – Vilana 100%.
Vineyard – organic vineyards in the Alagni area of central Crete, at approximately 600 m, on loam soils with northern exposure.
Vinification – hand-harvested during the first and second weeks of September. The grapes are destemmed without crushing, followed by 48 hours of skin contact at 8–10 °C. Most of the must ferments at 16–18 °C, while a small proportion ferments on the skins. The wine undergoes malolactic fermentation.
Appearance – mid straw.
Aroma – citrus and white-fleshed fruit, complemented by fresh green herbal notes.
Palate – juicy and slightly creamy, with vibrant acidity and a long, fresh finish.
Food pairing – fish and white meats, finger food, salads, soups and savory pies such as mushroom or pumpkin pie.
Serving temperature – 10–11 °C.
