Classification – dry white wine, PDO Santorini.
Grape variety – Assyrtiko 95%, Aidani 3%, Athiri 2%.
Vineyard – vineyards near Akrotiri and Megalochori, Santorini.
Vinification – short pre-fermentation cold maceration, followed by fermentation entirely in French oak barrels of 225, 300 and 500 L. The wine then ages for 4 months on the fine lees with bâtonnage.
Appearance – bright yellow with golden tones.
Aroma – elegant aromas of lime and magnolia blossom, with citrus marmalade and mastic, complemented by thyme, sage and mineral notes.
Palate – full-bodied and oily in texture, with high acidity balancing the depth of fruit and alcohol. The finish is long, with persistent notes of oak, roasted coffee and vanilla.
Food pairing – oily fish, pasta with rich creamy sauces, mushroom risotto, poultry, smoked eggplant dip and mature cheeses.
Serving temperature – 12–13 °C.
