Classification – dry white wine, PGI Atalanti Valley.
Grape variety – Sauvignon Blanc 100%.
Vineyard – selected sub-mountainous “Kryovrisi” vineyard on the northern side of Mount Chlomo, with west-facing exposure toward cooling currents from Mount Parnassus and soils composed mainly of limestone with some clay.
Vinification – cold pre-fermentation maceration followed by classic white vinification at low, controlled temperatures to preserve freshness and varietal aromas.
Appearance – bright light yellow with greenish hues.
Aroma – fresh aromas of citrus, melon, green apple, grapefruit and herbs.
Palate – light-bodied and refreshing, with crisp acidity and a clean, fresh finish.
Food pairing – green salads, seafood appetizers, fresh oysters, pasta with pesto, grilled fish, shrimp with garlic sauce, asparagus, mildly spiced Indian or Thai seafood dishes and ceviche.
Serving temperature – 7–10 °C.
