Classification – dry white wine, PGI Attica.
Grape variety – Savatiano 100%.
Vineyard – old bush-vine vineyards around Keratea, at approximately 250–350 m.
Vinification – hand-harvested grapes are cooled, destemmed and given approximately 6 hours of pre-fermentation skin contact at 10 °C. After static settling, fermentation takes place in small stainless-steel tanks at approximately 16 °C. The wine remains on the lees for about 3 months with regular stirring.
Appearance – bright straw-yellow with green highlights.
Aroma – stone fruit and white flowers with characteristic wild-herb notes.
Palate – rich and balanced, with refreshing acidity and a clean, persistent finish.
Food pairing – poultry and white meats, seafood, lean fish and shellfish, cheese tarts, vegetable dishes, pasta, risotto, green salads and Asian cuisine.
Serving temperature – 8–11 °C.
