Classification – dry white wine, Traditional Designation Retsina.
Grape variety – Savatiano 100%.
Vineyard – old bush-vine vineyards around Keratea, at approximately 200–350 m.
Vinification – hand-harvested grapes are cooled, destemmed and given approximately 6 hours of pre-fermentation skin contact at 10 °C. Fermentation takes place in small stainless-steel tanks at approximately 16 °C with the addition of pine resin. The wine remains on the lees for about 3 months with regular stirring.
Appearance – bright lemon with green highlights.
Aroma – peach, mango and lemon with mastic-like resin notes, white flowers and herbs.
Palate – fresh and balanced, with persistent fruit and herbal flavors and a long, clean finish.
Food pairing – fried seafood, marinated fish, sashimi, carpaccio, cheese croquettes, stuffed peppers and dishes with pronounced garlic flavors.
Serving temperature – 9–11 °C.
