Classification – dry white wine, PGI Attica.
Grape variety – Malagousia 100%.
Vineyard – vineyards in Metochi, Dardeza and Synterina, Keratea, at approximately 200–350 m.
Vinification – hand-harvested grapes are cooled, destemmed and given approximately 9 hours of pre-fermentation skin contact at 10 °C. Fermentation takes place mainly in stainless steel, with a smaller proportion in barrel. The wine remains on the lees for about 3 months with regular stirring.
Appearance – bright lemon with green highlights.
Aroma – intense spring flowers, peach and mango, complemented by fresh herbal notes.
Palate – rich and aromatic, balanced by refreshing acidity, with a fruity and herbal finish.
Food pairing – grilled poultry, shellfish, stuffed squid, asparagus risotto, vegetable pasta, crispy vegetables, cheese tarts, herb salads and Asian appetizers.
Serving temperature – 8–12 °C.
