Classification – dry white wine, PGI Attica.
Grape variety – Assyrtiko 100%.
Vineyard – vineyards in Olympos and Skinti Marthi, Keratea, at approximately 200–350 m, on mineral-rich limestone soils.
Vinification – hand-harvested grapes are cooled, destemmed and given approximately 8 hours of pre-fermentation skin contact at 10 °C. After static settling, fermentation takes place in small stainless-steel tanks at approximately 17 °C. The wine then remains on the lees for about 3 months with regular stirring.
Appearance – bright lemon with green highlights.
Aroma – citrus and lime, white spring flowers and pronounced mineral notes.
Palate – full-bodied and lively, with refreshing acidity, citrus, herbs and a distinct mineral-saline character leading to a long, persistent finish.
Food pairing – rich seafood, oily fish, white meats, creamy pasta dishes and traditional lemon-based Greek dishes such as lamb fricassee.
Serving temperature – 10–12 °C.
