Mylonas Cuvee Vouno Savatiano Late Release, 12%, 0.75 L
Classification – dry white wine, PGI Attica.
Grape variety – Savatiano 100%.
Vineyard – single “Vouno” vineyard in Keratea at approximately 300 m, with northeastern exposure and gravel over limestone. The organic bush vines are more than 60 years old and naturally low-yielding.
Vinification – hand-harvested grapes are cooled, destemmed and given approximately 6 hours of pre-fermentation skin contact at 10 °C. Fermentation takes place in small stainless-steel tanks at approximately 16–17 °C. The wine remains on the lees for about 9 months with regular stirring, then matures in bottle for approximately 3 years before release.
Appearance – bright gold.
Aroma – ripe stone fruit, mature white fruit, nuts and herbs, with a subtle petrol note.
Palate – full and intense, with vibrant balancing acidity, layered complexity and a particularly long finish.
Food pairing – slow-cooked poultry and white meats, roast lamb or pork with herbs, aged and smoked cheeses, rich pasta dishes and Asian dishes with pork or chicken.
Serving temperature – 8–11 °C.
