Karanika Cuvee Speciale Extra Brut, 2023, 11.5%, 0.75 L

Classification – extra brut white quality sparkling wine, varietal wine.

Grape variety – ungrafted Xinomavro 90%, Assyrtiko 10%.

Vineyard – organic vineyards on the Amyndeon plateau at approximately 650 m. Xinomavro comes from selected sites including Bella Tumba, Petres and Pedino, while Assyrtiko comes from Levea.

Vinification – whole bunches are gently pressed, followed by temperature-controlled primary fermentation at 18–22 °C, with low sulfur use and no chemical additives. Secondary fermentation takes place in bottle using the traditional method, followed by approximately 12 months on the lees before disgorgement.

Appearance – pale yellow with a subtle pinkish hue, fine persistent bubbles and a creamy mousse.

Aroma – fresh and expressive, with red fruit such as strawberry and raspberry, citrus notes and a subtle yeasty character.

Palate – vibrant and balanced, with refreshing acidity, fine persistent bubbles, a mineral-saline character and a long, clean finish.

Food pairing – seafood, shellfish, sushi, cured meats and cheeses; also excellent as an aperitif.

Serving temperature – 6–8 °C.
