Classification – brut white sparkling wine, varietal wine.
Grape variety – Savatiano 100%.
Vineyard – old bush-vine vineyards around Keratea, Attica, at approximately 200–350 m, on limestone-rich soils.
Vinification – produced by the ancestral Pét-Nat method. Hand-harvested grapes are cooled, destemmed and pressed, followed by static settling and fermentation in stainless steel at approximately 17 °C. The wine is bottled before fermentation is complete, finishes fermentation in bottle and remains on the lees for about 4–5 months before hand disgorgement.
Appearance – pale lemon with green highlights and a slight natural haze, with fine lively bubbles.
Aroma – white flowers, fresh herbs, stone fruit, citrus and subtle yeasty notes.
Palate – dry, lively and refreshing, with bright acidity, fresh fruit, gentle bubbles and a clean citrus-mineral finish.
Food pairing – oysters, sushi, seafood, fresh salads, salty appetizers, fried dishes and soft cheeses.
Serving temperature – 8 °C.
