Classification – brut white quality sparkling wine, varietal wine.
Grape variety – Moschofilero 100%.
Vineyard – privately owned “Perpatiara” vineyard in Rizes, Arcadia, at approximately 720 m, on clay-loam soils.
Vinification – early-harvested grapes are cooled and whole-bunch pressed. The base wine ferments at low temperature in stainless steel, followed by a second fermentation in bottle using the traditional method and approximately 12 months of maturation on the lees before disgorgement.
Appearance – light lemon-green with fine, persistent bubbles.
Aroma – citrus blossom, lime, peach and rose, with honey and subtle brioche notes from lees aging.
Palate – crisp and refreshing, with fine bubbles, lively acidity and delicate yeast and toasted-bread notes.
Food pairing – aperitif, salads, raw seafood, sushi, mussels, clams and soft cheeses.
Serving temperature – 9–11 °C.
