Classification – dry rosé wine, PGI Arcadia.
Grape variety – Moschofilero 100%.
Vineyard – single “Perpatiara” vineyard in Rizes, Arcadia, at approximately 750 m, on gravelly clay soils.
Vinification – destemming followed by approximately 48 hours of pre-fermentation cold maceration at 8 °C. Alcoholic fermentation takes place at low temperature in the presence of part of the fine lees; the wine is then racked and vinification continues as for a white wine.
Appearance – gentle pink with salmon hues.
Aroma – citrus fruit and blossom, with notes of rose and jasmine.
Palate – rich and refreshing, with balanced acidity and a long, persistent finish.
Food pairing – Chinese and Thai cuisine and mushroom risotto.
Serving temperature – 9–11 °C.
