Classification – dry red wine, PGI Crete.
Grape variety – Syrah 89%, Kotsifali 11%.
Vineyard – vineyards in the Alagni area of central Crete, at approximately 480 m, on clay-loam soils.
Vinification – a green harvest is carried out in July to support phenolic ripeness, followed by hand harvesting during the first week of September. Fermentation takes place with selected yeasts at controlled temperatures. Approximately 15% of the wine matures in oak barrels for 12 months.
Appearance – deep red.
Aroma – dark fruit with attractive floral notes and violets, complemented by cedar, subtle oak and delicate spice.
Palate – rich and long, with concentrated fruit, fresh acidity and a savory, piquant finish.
Food pairing – grilled red meats, game and piquant cheeses.
Serving temperature – 15–16 °C.
