Classification – dry red wine, PGI Crete.
Grape variety – Liatiko 100%.
Vineyard – non-irrigated vineyards in Sitia at approximately 580 m and Rethymnon at approximately 850 m, on loam soils with northern exposure.
Vinification – the grapes are harvested over an extended period. Most undergo gentle maceration for 6–8 days at 20–22 °C, while a smaller proportion is whole-bunch fermented for 9 days at 25–29 °C. Part of the fermentation is carried out with indigenous yeasts. The wine completes malolactic fermentation and natural stabilization in stainless steel, without fining or cold treatment.
Appearance – light ruby red.
Aroma – wild berries and red fruit, with herbal notes and a subtle touch of butterscotch.
Palate – balanced and juicy, with fine tannins and an expressive fruity finish.
Food pairing – moussaka, pizza, pasta with red sauces and oven-baked tuna with tomato.
Serving temperature – 15 °C.
