Grape variety – Kotsifali 100%.
Vineyard – vineyards in central Crete at approximately 500 m, on loamy-sand soils with northern exposure.
Vinification – hand-harvested, with harvest timing determined by berry sensory assessment. Fermentation takes place with approximately 7 days of skin maceration at controlled temperatures of 25–28 °C.
Appearance – bright mid ruby.
Aroma – red cherry and zesty dark fruit, with a touch of spice.
Palate – balanced and savory, with smooth tannins, juicy acidity and a long, fruity finish.
Food pairing – Mediterranean dishes with tomato, roasted meats and spicy cheeses.
Serving temperature – 16–17 °C.
