Classification – dry red wine, PGI Cyclades.
Grape variety – Mandilaria 100%.
Vineyard – “Agia Marina” vineyard near Megalochori, Santorini.
Vinification – 90-hour cold maceration with crushed grapes, followed by red fermentation in stainless steel tanks at 16–18 °C for 15–20 days. The wine then ages for 18 months in oak on the lees.
Appearance – deep red with violet highlights.
Aroma – red fruit aromas of cherry and strawberry, with dried fig, mulberry leaf and vanilla from the oak.
Palate – structured and medium-bodied, with firm varietal tannins, noticeable acidity and notes of plum and clove. The finish is intense and long.
Food pairing – ribeye with gravy, beef stew, guinea fowl with mushrooms, roast lamb and pasta with lobster or red mullet.
Serving temperature – 14 °C.
