Classification – dry red varietal wine.
Grape variety – Syrah 40%, Merlot 40%, Cabernet Sauvignon 20%.
Vineyard – selected vineyards in Atalanti and Domokos, at approximately 400–450 m, on clay hillside soils.
Vinification – 4 days of pre-fermentation cold maceration at 8–10 °C, followed by traditional red vinification at 22–24 °C. The wine matures for 12 months in French oak barrels and a further 2 years in bottle.
Appearance – bright ruby red with purple highlights.
Aroma – ripe red fruit, blueberry and blackcurrant jam, with oriental spices and cocoa.
Palate – generous and spicy, with round, soft tannins, a full mouthfeel and notes of chocolate and vanilla from the oak.
Food pairing – braised meats in tomato sauce, moussaka, pastitsio and other rich Greek or Mediterranean meat dishes.
Serving temperature – 16 °C; decant before serving.
