Classification – naturally sweet red wine from sun-dried grapes, PGI Cyclades.
Grape variety – Mandilaria 100%.
Vineyard – “Agia Marina” vineyard near Megalochori, Santorini.
Vinification – overripe grapes are sun-dried for 7–15 days, then destemmed and pressed. The sweet red juice ferments slowly for more than 2 months in stainless steel tanks at a controlled temperature. After fermentation, the wine is transferred to oak barrels for several years of maturation.
Appearance – tawny.
Aroma – distinctive aromas of dried fig, plum and spices.
Palate – viscous and luscious, with ripe berry fruit balanced by graceful acidity. Warm and concentrated, with notes of raisin, cinnamon and jammy red fruit.
Food pairing – duck with chestnuts and orange, Roquefort, kopanisti and other salty cheeses, as well as cream-based desserts.
Serving temperature – 8–10 °C.
