Classification – sweet white varietal wine.
Grape variety – Savatiano 85%, Aidani 15%.
Vineyard – vineyards in Metochi and the wider Keratea area, at approximately 200–350 m.
Vinification – hand-harvested grapes are dried in the shade for 6 days to concentrate the juice. After slow pressing and static settling, fermentation takes place in amphorae at approximately 18 °C. The wine then remains on the lees for about 3 months in stainless steel with regular stirring. Residual sugar: approximately 80 g/L.
Appearance – bright pale lemon.
Aroma – intense floral aromas with fresh peach and apricot, complemented by hints of citrus blossom, fennel and basil.
Palate – sweet yet fresh and delicate, with lively acidity balancing the richness of the fruit and a fine, persistent finish.
Food pairing – fruit tarts, cheesecake, crème brûlée, pavlova and other creamy or fruit-based desserts.
Serving temperature – 6–8 °C.
